They didn't want to waste what they had grown.
They liked the way their home-grown food tasted.
Other reasons in no particular order - To have control over what they ate -
avoid pesticides, preservatives. To be able to make dietary changes to meet
their needs. To preserve desired combinations of foods. To can as a tradition.
Because it's healthy. To give as gifts - in fact, 20% of all jars canned are given away!
